The best way we can describe this beer is the Vanilla Bourbon Beast. Never one for sticking to a normal style, we first brewed a pretty generic porter but went over the top by adding more malt than the recipe called for. While racking it into the secondary fermenter, we extracted vanilla beans in bourbon and then mixed them both into the brew to add a nice finish. In the end, this beer carries a smooth mouthfeel because of the vanilla, yet a warmth perfect for the dead of winter. We plan to see how this one matures in the coming months, as it has plenty of characteristics we expect to evolve.
